[问题]陶瓷无油烟锅

某人对不粘锅神经过敏. 可是不用不粘锅我都没法做菜. 听说国内的陶瓷无油烟锅挺好用, 谁用过? 好不好用? 到底粘不粘? 哪个牌子质量高:苏泊尔,爱仕达,麦考林?

估计这个锅比较符合某人的要求. 不过目前还没货.

我最近改用锅底三明治的不锈钢锅炒菜, 很狼狈. 只有炒鸡蛋比较好用. 最主要问题是锅底传热太快. 用不锈钢锅炒中国菜有啥诀窍吗? 是不是油热后要把火关小?

不锈钢锅炒中国菜,尤其有肉丝,鸡蛋什么的,好像除了多加油没别的办法。西餐用平底的,加油,猪排什么的下去煎,开始黏,熟了以后就分开了。用大厨的说法,食物跟锅分开就是告诉你,它熟了。

I find it ok. -- I do not cook at super high heat anyway. Extra virgin olive oil is not meant to be used for stirfry, since heat ruins the flavor and fragrance of really fine olive oil. Regular olive oil is good for satueeing or roasting.
If you really need high heat when cooking chinese food, so that your chicken and meat can be very tender and juicy, I suggest grapeseed oil. It is relatively less known and thus might be a bit harder to find, but not much pricier than olive oil. It has a relatively high smoke point, also rich in vitamin E, low in saturated fat, contains antioxidants and considered healthy. Study also shows (if you do believe in those hearsay studies), it helps to raise HDL and lower LDL.

我非常无知者无畏地问一句,国外超市里除了橄榄油,难道还有其他的油可以烧菜么?!

vegetable oil, canola oil(油菜籽油), corn oil, sunflower oil, peanut oil……
顺便问一下knowing,grapeseed oil里的saturated fat含量怎样?

报告,我刚买了上海产的“乐无烟”,430一个,据我老妈说跟爱仕达之类差不多的价格和功能。我买的这款适用于电磁炉,贵一点。用油比较少,烟也不大。

跟不粘锅也不差什么,不要用太高的温度,我炒肉丝和煎蛋觉得不错,下锅一会轻轻一推就可以翻身了,炒青菜也好

多谢风玲. 你为什么挑乐无烟呢? 是富贵星型乐无烟还是合家欢型乐无烟?
我现在完全糊涂了, 不知道托人买哪种? 乐无烟, 苏泊尔, 爱士达还是锅王胡师傅?

我妈在超市比了一会,觉得那几个牌子都一样,最后挑了乐无烟。是福满堂型的,电磁炉也可以用,还可以用铁铲,如果是合家欢型的还要用软质锅铲。
