Michelin's Jean-Luc Naret and friend hail Tokyo as top city for fine dining

The home of haute cuisine just got taken down a peg with an authoritative judgement that Paris is not the world's top city for good eating. That distinction now goes to Tokyo, according to the bible for foodies everywhere, the Michelin guide.

In its first ever edition devoted to an Asian city, it awarded restaurants in Tokyo a total of 191 stars. That was nearly twice as many as Paris can boast, and more than three times New York's total.


Tokyo is becoming the global city with the finest cuisine, the city in the world with the most stars

Eight of Tokyo's restaurants won the maximum three stars - only two fewer than Paris itself. Another 25 got two stars and 117 one star.

To add to Paris's embarrassment, three of the top eight restaurants in Tokyo serve French food. Three more offer traditional Japanese fine dining, and the other two are sushi houses.

"Tokyo is becoming the global city with the finest cuisine, the city in the world with the most stars," said Michelin guide director Jean-Luc Naret.

Michelin's plans to assess Tokyo restaurants had caused controversy in Japan, where some commentators had doubted whether it would be up to the job.

这篇我也从英国THE TIMES上读到了,某人特地指给我看的,很是惊叹了一番。

看来Karen把我的Firenze游记归入食物贴范畴了 :laughting015: :oops:

仔细研究了一下这两篇文章,说的是haute cuisine, fine dining。单凭这我觉得不能就封一个地方为美食之都。要平民可以享受的日常食物好,再来点精华餐厅,那才是真好。日本人那么讲究entertaining,吃好的用公款,当然可以精益求精。

仔细研究了一下这两篇文章,说的是haute cuisine, fine dining。单凭这我觉得不能就封一个地方为美食之都。
对, 日本戴星的馆子都是天价,普通人哪儿吃得起。 我觉得得quality/price比例最高的才算是美食之都。 不过话说回来,上面那么好底下也不会差。
一说起日本的法国馆子就让我想起Iron chef Sakai, 用起鸭肝鱼子酱黑菌丝毫不手软的。

听说东京有很多吃的很好的小馆子。Michelin这么评只能说明他们本身BIASED TOWARDS FINE DINING。

他们一直是这样,我也觉得没啥错,反正有大把别的杂志小册子评鉴小馆子的。

Michelin has been the authoritative dining guide in the restaurant industry and is based in France. Draw your own conclusions about their leanings.

我没见过他,上次他在前线俱乐部开小讨论,票子很快就没了 :nono: 那里场地很小,只能坐二三十人最多 :!:

晚上我去见BBC London New的主播之一,虽然不是什么大卡司 :yinyang: 唉,要是我最最亲爱的Jon Snow就好了 :speechless002: :speechless002: :speechless002:

扯回正题,就象JUN有次说的,在街上随便撞进一个馆子十有八九是好吃的话,这个地方的食物水准才算高的。伦敦在我看来还不够格,巴黎和罗马可以算得上。

那就是我在罗马运气不好, 或者因为在游客区. 要专门找去的才好.
我觉得巴黎也OVERRATED, 不见得比得上法国其他地方. 就好象说中国美食博大精深, 然而北京是中国吃的最好的城市么? 选择肯定比较多, 各种风味比较齐全, 肯定也有很多道地的餐馆. 但原料的新鲜程度总是要打折扣的. 芭黎自身没多少特色烹调, 除了我顶不喜欢的洋葱汤.

有道理。人家还说Lyon的饭店比巴黎更好呢。

我喜欢在餐馆门口贴菜单的制度,什么价位一目了然,从品种也可以看出这家店是针对游客的千篇一律菜,还是有季节性有特色的烹调。可能是这个原因,在法国和意大利选餐馆不算太困难。当然如果整个地段都没什么选择,比如我们在Lugano那样,就没办法了。再有就是名胜附近,尤其是大广场上去不得。

我在翡冷翠吃到的最差的一顿就是在Palazzo Pitti 对面的一家pizza 馆子,装潢得很新潮很漂亮,是旅游书推荐的。里面很多讲英语的游客。结果又贵又无味。

最近在读梅格雷,特别喜欢描述五十年代老巴黎的街坊景色,和冷冷的观察。看到这一段,十分戚戚,抄在这里:

[上文中,探长跑到一个不怎么高级的老旧街坊去调查案子,中午在一家油腻的小馆子吃饭顺便监视别人。这家馆子的特色菜是炸猪肠。这一段是晚上他回家跟梅太太晚饭时。]

He told her about having chitterlings for lunch at the bistro in the Saint Antoine district. They had often gone together to such places, which were more numerous in the old days, typical of Paris. There used to be one in nearly every street and they were know as lorry-drivers' restaurants.

"You know, the real reason one ate so well there was that they were all owned by people who'd come straight from their native provinces --- Auvergne, Brittany, Normandy, Burgundy--- and who not only kept up the traditions they'd brought with them, but were in constant touch with home and sent to the country for hams and terrines and sausages, sometimes even for bread..."

我也觉得是。东京虽然也有不少好吃的地儿,但是风格都是那种精致的,标准化的,纯净的,接近食材本身味道的。就是没有那种热辣辣好吃的劲儿。

某年某月和某人在伦敦的一条小街上吃过意大利菜的酿茄子(菜名忘了,疑似),美味。还有一次吃印度素菜,味道也不错。此外,就没啥好吃的回忆了。

我在翡冷翠吃的最差的一顿就是买了一个味道奇怪的冰淇淋。遂得出结论,不是所有的意大利冰淇淋都好吃啊。 :cool023:

There used to be one in nearly every street and they were know as lorry-drivers' restaurants.
I ate in one of these lorry drivers' restaurants in Milano last week! 他们都是三个两个进来的,跟老板娘很熟,点菜大方。到最后一个餐厅全部坐满,就我一女的,特别不自在。他们的墨鱼沙拉实在太好吃了,真没想到celeriac丝和胡罗卜丝也可以拌墨鱼。

这个人的调子很象唐鲁孙他们回忆北京的山东和河南馆子,上海的徽州和广东馆子,台北的上海馆子的意思啊。

那是因为他们说的是实话吧?法国农民也好,中国农民也好,进城开饭馆,都是这么不是很自然吗?
