耳鼻屋

昨天去越南deli买俩夹肉三明治,柜台桌上照例摆了很多家制的食物。我拿起一根粗大似香肠的东西,外面是塑料纸包着,里面软软的,暧昧混沌的棕色,有黑丝白丝夹杂,看不出明确的内容。读一下商家自印的标签 ingredients:nose, ear, much rooms, salt, water.

没敢买来吃,现在后悔当时没拍张照片下让别人认认。

我也喜欢吃越南三明治,最喜欢带他们自治的肝酱的。
不过我们这边专卖三明治的店,卖的其他东西都模样漂亮,味道不好吃。

主要是标签上也不写是猪的还是牛的,乍看上去也可理解为人耳人鼻...

应该是猪耳和猪鼻。越南似乎与中国一样,虽然现在也吃牛肉,牛身上的其它部分并不多见,除了牛肚。猪的比例重得多。这个黑丝大概是木耳,他们都叫mushroom。

被馋到了,中午切了新鲜的棍子面包,每片上狠狠地铺了一层渍white anchovy,大吃了一顿。

对了,CAVA在越南时吃过三明治吗?美国的越南三明治也不知道正宗不正宗,面包上涂了butter再烤热。不过反正好吃就行。

没吃过,但见过好些小摊。馅料、酱料好象有很多种,顾客可以随意选择搭配。

使劲狗了一下,看来还是nose,ear, ear mushroom。
这个吃的叫Gio Thu , Vietnamese Head Cheese。
成分是
•2 pig ears•2 pig tongue
•1 snout•2 hamhock (bones discarded)
•2.5 tbs fish sauce
•1 ts sugar
•2 cloves garlic, minced
•2 medium shallots, minced
•2 tbs coarsely cracked peppercorns
•1 cup black fungus (whole woodear mushrooms) soaked for about 1/2 hr and drained
•cooking oil
•2-3 empty medium sized round tin cans or cardboard cans and plastic sandwich bags

最近从越南带回来的菜谱里挑些简单的来做,昨天试了一个越式家常豆腐。用香茅、辣椒、蒜、盐、糖舂出来的碎茸腌渍老豆腐片30分钟,两面煎黄,蘸生抽、鱼露、青柠、糖和红辣椒圈的调料吃。因为鱼露的味道,竟有几分油炸臭豆腐干的风采。

鱼露虾油闻起来都嫌腥气,吃起来真鲜美。说起来,我们这儿越南面包店卖的越南面包美味也就一般,可是咖啡真是好啊!
