What is 亚硝酸盐 anyway?
Theoretically, vitamin C (ascorbic acid) is water soluble. It is also an antioxidant. It has been used in some processed food as a "natural preservative", which means it prevents other ingredients from oxidation. However, it does NOT mean ascorbic acid is unstable in the air. If it's so unstable in the air, all the vitamin C tablets would have a very very short shelf-life because the active ingredient would be immediately oxidized and become inactive as soon as you open the bottle.
I have not done any analysis myself, but I doubt the person who gave the warning also tested how much vitamin C is actually in fresh, cooked, and leftover vegetables, and what's the rate of degradation.
If vitamin C were so unstable that you have to wash before you cut, there wouldn't be any left after cooking in high heat. We should all eat it raw then.

能剩的菜一般都是肉的或者块茎的或者比较坚实的,排骨,鸡,牛腩,红烧肉,萝卜土豆, 豆角。。。绿叶菜刚炒出来马上放进餐盒,第二天一热还将就。不过我是广东式炒青菜法,一般的绿叶菜是不怎么切的,整根的炒,象通菜、小白菜、菜心、芥菜、蕃薯叶。。。切成小段的再炒,第二天吃的确差很多,比如大白菜。反正也不必顿顿要吃青菜。当然,这是说我自己。
我室友特别爱吃剩了一顿的中式青菜。我的剩菜都被她吃了,我很不好意思,她也很不好意思。

Seems to me the hardest part is to get the protein down in this plan. Other than eggs (I don't even like egg yolk) and diary, I don't see how one can get protein cheaply. Soy protein is incomplete and less efficient than animal protein. One can't eat egg and diary all the time. Any advice?这个周末收拾书桌,翻到上学期的作业,要求的meal plan是:
$15/week per person in a family of 4 (two kids breakfast free), low fat,跟这个25的标准比更狠啊

我小时候,中国还是凭票供应,每人每月只有半斤油,一两斤肉。我们那一代人肯定都营养不良。不过也都活下来了。
